Broiled Shrimp Dijon

2	lbs.		jumbo shrimp (16-20 size)
1	cup		mayonnaise
2	T.		Parmesan cheese, grated
1	T.		Dijon-style mustard
4	cloves		garlic, minced
			pepper, freshly ground
			fresh parsley, chopped

A)	Shell, devein and butterfly shrimp.
B)	Line cookie sheet -or- baking pan with foil 
	for easy cleanup.
C)	Combine rest of ingredients, except parsley.  
	Spread mixture on shrimp.
D)	Broil about 5 inches from heat source for
	about 5 minutes -or- until shrimp is cooked.
E)	Garnish with parsley.  

NOTE:	Best served with boiled red potatoes, dilled 
	green beans and sliced fresh tomatoes.
