1 lb. round steak 3 T. shoyu 1 T. cornstarch 1 T. water 1 tsp. sugar ¼ cup onion, sliced ¼ cup + 1 T. oil ½ tsp. salt 1 bunch broccoli A) Cut beef in thin, ¼" slices x 2" long. Combine shoyu, cornstarch, water and sugar. Add beef and set aside. B) Cut broccoli into bite-sized pieces. Heat 2 T. oil in skillet. Add salt and broccoli and stir-fry until broccoli is dark green. C) Heat 3 T. oil. Add onion and beef. Stir-fry for approximately 2 minutes or until beef is cooked. Add broccoli to beef. Heat thoroughly and serve. ¼ cup butter -or- margarine (½ stick) ¼ cup flour 2 cups milk salt pepper, freshly ground (to taste) A) Put the butter in a microwaveable 1 qt. bowl and melt on high for 15-30 seconds. B) Stir in the flour until smooth and blended. Stir in the milk, salt and pepper. Microwave on high for about 2 minutes. C) Stir and microwave on high for another 1-2 minutes - until thickened.
